بررسی پروفایل اسیدهای چرب و عناصر سنگین (مس، کروم و کبالت) در روغن‌های حیوانی استان ایلام

چکیده

میزان فلزات سنگین، اندیس­های فیزیکی - شیمیایی و پروفایل اسیدهای چرب مخصوصاً اسیدهای چرب ترانس در روغن­ها، فاکتورهای بسیار مهمی برای تعیین کیفیت آن­ها می‌باشد. در این تحقیق، روغن‌های حیوانی 19 منطقه مختلف استان ایلام مورد بررسی قرار گرفت و پس از هضم و استخراج به‌روش هضم اسیدی با کمک امواج ریز­موج، میزان فلزات سنگین آن‌ها، توسط یک روش بهبودیافته اسپکتروسکوپی جذب اتمی شعله اندازه‌گیری شده است. پروفایل اسیدهای چرب پس از استخراج و مشتق‌سازی با روش کروماتوگرافی گازی آنالیز گردید. به‌منظور سهولت در نتیجه‌گیری داده‌های حاصل، نمونه‌گیری‌های مناطق مختلف استان به سه قسمت شهرستان‌های شمالی، جنوبی و مرکزی تقسیم ‌شده‌اند. مطابق نتایج به‌دست‌آمده میزان مس، کبالت و کروم به‌ترتیب در دامنه 47/4-04/0، 33/2-02/0 و mg/Kg 54/3 -02/0 گزارش شد که پایین‌تر از سطح بیشینه مجاز برای فلزات می‌باشد. در روش اصلاح‌شده گاز کروماتوگرافی، امکان جداسازی هم‌زمان 27 اسید چرب حاصل‌ شد و جداسازی قابل قبولی برای اسید اولئیک و لینولئیک به‌منظور محاسبه ایزومرهای سیس و ترانس به‌دست آمد. طبق نتایج به‌دست‌آمده از پروفایل اسیدهای چرب در مناطق شمالی، مرکزی و جنوبی استان ایلام، در تمامی مناطق میزان اسیدهای چرب اشباع نسبت به اسیدهای چرب غیراشباع و سایر اسیدهای چرب دارای مقادیر بالاتری می‌باشند.

چکیده [English]

In determining the quality of oils, heavy metal content, physical-chemical indices, and fatty acid profile, especially trans fatty acids are important factors. In this study, animal oil samples of different regions of Ilam province studied. After digestion and extraction by microwave-assisted acid digestion, the heavy metals content of the samples measured by an improved flame atomic absorption spectroscopy method. Moreover, after extraction and derivatization of the oils, the fatty acid profile was analyzed by gas chromatography. To facilitate the conclusion of the data obtained, samples of different regions of the province are divided into three parts: northern, southern, and central cities. According to the results, copper, cobalt, and chromium levels were reported in the range of 0.04-4.47, 0.02-2.33, and 0.02-3.54 mg/kg, respectively, which were below the maximum permissible levels. It was revealed that using the modified gas chromatography method, it is possible to separate and measure 27 fatty acids simultaneously. Besides, an acceptable degree of extraction of oleic and linoleic acid is extracted to calculate the cis and trans isomers, which was achieved.
